Kitchen Equipment Needed:
- Baking dish
- Mixing bowl
- Whisk
- Saucepan
- Wooden spoon
- Oven
Ingredients:
For the Bread Pudding:
- 6 cups cubed stale bread (such as French or brioche)
- 1 can (20 ounces) crushed pineapple, drained
- 4 large eggs
- 1 cup granulated sugar
- 2 cups whole milk
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- Pinch of salt
For the Pineapple Glaze (Optional):
- 1/2 cup pineapple juice
- 1/4 cup granulated sugar
- 1 tablespoon cornstarch
Directions:
- Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a baking dish with butter or cooking spray.
- Prepare the Bread: Place the cubed bread in a large mixing bowl. Add the drained crushed pineapple and toss gently to combine.
- Make the Custard Mixture: In another mixing bowl, whisk together the eggs, sugar, milk, vanilla extract, cinnamon, nutmeg, and salt until well combined.
- Combine Bread and Custard: Pour the custard mixture over the bread and pineapple mixture. Gently toss until the bread cubes are evenly coated and soaked in the custard mixture.
- Transfer to Baking Dish: Transfer the bread pudding mixture to the prepared baking dish, spreading it out evenly.
- Bake: Place the baking dish in the preheated oven and bake for 45-50 minutes, or until the bread pudding is set and golden brown on top.
- Make the Pineapple Glaze (Optional): In a saucepan, combine the pineapple juice, sugar, and cornstarch. Cook over medium heat, stirring constantly, until the mixture thickens and becomes glossy. Remove from heat and let it cool slightly.
- Serve: Once the bread pudding is done baking, remove it from the oven and let it cool for a few minutes. Drizzle the optional pineapple glaze over the top, if desired. Serve warm or chilled, and enjoy the tropical flavors!
