Savor the taste of the tropics with this Pineapple Bread Pudding. Moist, flavorful, and infused with juicy pineapple chunks, this dessert offers a delightful departure from traditional bread pudding.

Whether served warm or cold, it’s a comforting treat that brings a touch of sunshine to any occasion.

Kitchen Equipment Needed:

  1. Baking dish
  2. Mixing bowl
  3. Whisk
  4. Saucepan
  5. Wooden spoon
  6. Oven

Ingredients:

For the Bread Pudding:

  • 6 cups cubed stale bread (such as French or brioche)
  • 1 can (20 ounces) crushed pineapple, drained
  • 4 large eggs
  • 1 cup granulated sugar
  • 2 cups whole milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Pinch of salt

For the Pineapple Glaze (Optional):

  • 1/2 cup pineapple juice
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch

Directions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a baking dish with butter or cooking spray.
  2. Prepare the Bread: Place the cubed bread in a large mixing bowl. Add the drained crushed pineapple and toss gently to combine.
  3. Make the Custard Mixture: In another mixing bowl, whisk together the eggs, sugar, milk, vanilla extract, cinnamon, nutmeg, and salt until well combined.
  4. Combine Bread and Custard: Pour the custard mixture over the bread and pineapple mixture. Gently toss until the bread cubes are evenly coated and soaked in the custard mixture.
  5. Transfer to Baking Dish: Transfer the bread pudding mixture to the prepared baking dish, spreading it out evenly.
  6. Bake: Place the baking dish in the preheated oven and bake for 45-50 minutes, or until the bread pudding is set and golden brown on top.
  7. Make the Pineapple Glaze (Optional): In a saucepan, combine the pineapple juice, sugar, and cornstarch. Cook over medium heat, stirring constantly, until the mixture thickens and becomes glossy. Remove from heat and let it cool slightly.
  8. Serve: Once the bread pudding is done baking, remove it from the oven and let it cool for a few minutes. Drizzle the optional pineapple glaze over the top, if desired. Serve warm or chilled, and enjoy the tropical flavors!
