Ingredients:
- 1 lb thinly sliced beef (ribeye or sirloin)

Directions:
- Prepare the Filling: In a large skillet over medium-high heat, heat the vegetable oil. Add the thinly sliced beef and cook until browned, about 4-5 minutes. Remove the beef from the skillet and set aside.
- Sauté Vegetables: In the same skillet, add the onions, green bell pepper, and red bell pepper. Sauté until the vegetables are tender, about 5-6 minutes. Add the minced garlic and cook for an additional minute. Season with salt and pepper to taste.
- Combine Ingredients: Return the cooked beef to the skillet with the vegetables. Mix in the shredded provolone and mozzarella cheeses until well combined and the cheese is melted. Remove from heat and let the mixture cool slightly.
- Assemble the Egg Rolls: Lay an egg roll wrapper on a clean surface with one corner pointing towards you (like a diamond shape). Spoon about 2-3 tablespoons of the beef mixture onto the center of the wrapper. Fold the bottom corner over the filling, then fold in the sides, and roll up tightly. Seal the edge with a little beaten egg to keep it closed. Repeat with the remaining wrappers and filling.
- Fry the Egg Rolls: Heat oil in a deep fryer or large pot to 350°F (175°C). Carefully add the egg rolls in batches, frying until they are golden brown and crispy, about 3-4 minutes. Remove the egg rolls with tongs and drain on paper towels.
