Ingredients:

For the Dough:

  • 2 1/4 teaspoons active dry yeast
  • 1 cup warm milk (about 110°F or 45°C)
  • 1/4 cup granulated sugar
  • 1/3 cup unsalted butter, melted
  • 1 teaspoon salt
  • 2 large eggs
  • 4 cups all-purpose flour, plus more for dusting

For the Filling:

  • 8 ounces cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract

For the Topping:

  • 1 cup chopped pecans
  • 1/4 cup unsalted butter, melted
  • 1/2 cup packed brown sugar

Directions:

  1. Activate the Yeast: In a small bowl, dissolve the yeast in warm milk and let it sit for about 5 minutes until foamy.
  2. Prepare the Dough: In a large mixing bowl, combine the sugar, melted butter, salt, eggs, yeast mixture, and 2 cups of flour. Mix until smooth. Gradually add the remaining flour, 1/2 cup at a time, until a soft dough forms.
  3. Knead the Dough: Turn the dough out onto a lightly floured surface and knead for about 5-7 minutes, until it is smooth and elastic.
  4. Let the Dough Rise: Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1 hour, or until doubled in size.
  5. Prepare the Filling: In a medium mixing bowl, beat the softened cream cheese, sugar, and vanilla extract until smooth and creamy. Set aside.
  6. Assemble the Rolls: Punch down the risen dough and roll it out into a rectangle, about 1/4 inch thick. Spread the cream cheese filling evenly over the dough, leaving a small border around the edges. Roll the dough tightly from the long side, like a jelly roll, and pinch the seam to seal.
  7. Cut the Rolls: Using a sharp knife or dental floss, cut the rolled dough into 12 equal slices.
  8. Arrange in a Baking Dish: Place the sliced rolls in a greased baking dish, leaving a little space between each roll.
  9. Prepare the Topping: In a small bowl, mix together the chopped pecans, melted butter, and brown sugar. Sprinkle the pecan mixture evenly over the rolls.
  10. Let Rise Again: Cover the rolls with a clean kitchen towel and let them rise in a warm place for another 30 minutes.
  11. Bake the Rolls: Preheat your oven to 350°F (175°C). Bake the rolls for 25-30 minutes, or until they are golden brown and the filling is bubbling.
