Oven-Baked Crispy Smashed Potatoes are delightfully crispy and flavorful, topped with a delicious blend of olive oil, herbs, and seasonings. They’re not heavy or overly greasy either. I think they’re a perfect side dish for any occasion, and if you’re not a fan of certain seasonings, feel free to omit them.

They will still be undeniably delicious! If you’re looking for a light & crispy side dish that’s not overly complicated, you’ve come to the right place. When you make crispy, oven-baked smashed potatoes and pair them with a blend of fragrant herbs and seasonings, you get the perfect side. The addition of toppings just sends them over the top. I’ve really been in the mood for a versatile and satisfying side dish, and these crispy potatoes remind me of comfort and simplicity. Not a fan of certain herbs? Don’t worry, they’re still delicious without them.

  • Large pot
  • Baking sheet
  • Parchment paper
  • Potato masher or fork
  • Pastry brush
  • Large mixing bowl

Ingredients

  • 2 pounds baby potatoes (red or yellow)
  • 3 tablespoons extra vir olive oil (plus more for drizzling)
  • 2 teaspoons sea salt
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried rosemary (or fresh, chopped)
  • 1 teaspoon dried thyme (or fresh, chopped)
  • Fresh parsley for garnish (optional)

Directions

  1. Boil the Potatoes:
    • Place the baby potatoes in a large pot and cover with cold water. Add a pinch of salt and bring to a boil. Cook until the potatoes are tender, about 15-20 minutes. Drain and let them cool slightly.
  2. Preheat the Oven:
    • Preheat your oven to 450°F (230°C). Line a baking sheet with parchment paper.
  3. Smash the Potatoes:
    • Place the boiled potatoes on the prepared baking sheet. Using a potato masher or a fork, gently smash each potato to flatten slightly but still keeping them in one piece.
  4. Season the Potatoes:
    • In a large mixing bowl, combine the olive oil, sea salt, black pepper, garlic powder, rosemary, and thyme. Drizzle the mixture over the smashed potatoes, ensuring they are well-coated.
  5. Bake the Potatoes:
    • Bake in the preheated oven for 20-25 minutes, or until the potatoes are golden brown and crispy on the edges.
  6. Garnish and Serve:
