No Bake Summer Berry Icebox Cake is a delightfully refreshing dessert that’s layered with luscious whipped cream, graham crackers, and a medley of fresh summer berries. It’s not heavy or overly sweet either. I think it’s a perfect summertime or festive dessert, and if you’re not a fan of one type of berry, feel free to substitute it with your favorite.

It will still be undeniably delicious! If you’re looking for a light and airy dessert that’s not overly complicated, you’ve come to the right place. When you make a simple no-bake cake and pair it with the juicy sweetness of fresh berries, you get the perfect dessert. The addition of various berries just sends it over the top. I’ve really been in the mood for summer to arrive and this dreamy cake reminds me of sunny days and picnics. Not a fan of a particular berry? Don’t worry, it’s still delicious with your preferred fruits.

Kitchen Equipment Needed:

  • Mixing bowls
  • Whisk or electric mixer
  • 9×13 inch baking dish
  • Spatula
  • Measuring cups and spoons

Ingredients:

  • 3 cups heavy whipping cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 box graham crackers
  • 1 cup sliced strawberries
  • 1 cup blueberries
  • 1 cup raspberries
  • 1 cup blackberries

Directions:

  1. In a large mixing bowl, whip the heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form.
  2. Spread a thin layer of the whipped cream mixture on the bottom of a 9×13 inch baking dish to help hold the graham crackers in place.
  3. Arrange a single layer of graham crackers over the whipped cream, breaking them as needed to fit.
  4. Spread one-third of the whipped cream over the graham crackers, smoothing it out with a spatula.
  5. Scatter one-third of the mixed berries over the whipped cream layer.
  6. Repeat the layers two more times: graham crackers, whipped cream, and berries, ending with a layer of berries on top.
  7. Cover the dish with plastic wrap and refrigerate for at least 4 hours or overnight, allowing the graham crackers to soften and the flavors to meld together.
  8. Serve the No Bake Summer Berry Icebox Cake chilled, cutting into squares.

Enjoy the vibrant flavors and creamy texture of this No Bake Summer Berry Icebox Cake, a perfect dessert that’s sure to become a favorite. With its simple preparation and refreshing ingredients, it’s a dish that’s both light and indulgent!
