  • 8x8-inch square baking dish (or similar)

Ingredients
  

  • 2 cups old-fashioned rolled oats
  • 1 cup peanut butter or almond butter
  • ½ cup honey or maple syrup for a vegan option
  • 1 cup chocolate chips dark or semi-sweet
  • ¼ cup coconut oil
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Optional: ½ cup chopped nuts dried fruits, or shredded coconut

Instructions
 

  • Line an 8x8-inch baking dish with parchment paper, making sure the paper hangs over the edges for easy removal.
  • In a saucepan over low heat, melt the peanut butter, honey, and coconut oil together, stirring until smooth.
  • Remove from heat and stir in the vanilla extract and a pinch of salt.
  • Add the oats to the peanut butter mixture and stir until well combined. If you're adding any extras like nuts or dried fruit, fold them in at this stage.
  • In a microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring in between, until fully melted and smooth.
  • Press half of the oat mixture into the bottom of the prepared baking dish, creating an even layer.
  • Pour the melted chocolate over the oat layer, spreading it out evenly.
  • Press the remaining oat mixture over the chocolate layer.
  • Place the bars in the fridge for 2-3 hours, or until firm and set.
  • Once set, lift the bars out using the parchment paper, slice, and serve.
