Kitchen Equipment Needed:

  1. Mixing bowls
  2. Hand mixer or stand mixer
  3. 9×13-inch baking pan
  4. Spatula
  5. Cooling rack

Ingredients:

For the Cake:

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 can (20 oz) crushed pineapple, undrained

For the Frosting:

  • 1 package (8 oz) cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Directions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan or line it with parchment paper.
  2. Prepare Dry Ingredients: In a mixing bowl, whisk together the flour, baking soda, and salt until well combined. Set aside.
  3. Cream Butter and Sugar: In a separate mixing bowl, cream together the softened butter and granulated sugar using a hand mixer or stand mixer until light and fluffy.
  4. Add Eggs and Vanilla: Beat in the eggs, one at a time, followed by the vanilla extract, until well incorporated.
  5. Incorporate Pineapple: Gradually add the crushed pineapple (including the juice) to the wet ingredients, mixing until evenly distributed.
  6. Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  7. Pour Batter into Pan: Pour the cake batter into the prepared baking pan, spreading it out evenly with a spatula.
  8. Bake: Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  9. Cool: Remove the cake from the oven and place it on a cooling rack. Allow it to cool completely before frosting.
  10. Prepare Frosting: While the cake is cooling, prepare the frosting. In a mixing bowl, beat together the softened cream cheese, softened butter, powdered sugar, and vanilla extract until smooth and creamy.
  11. Frost the Cake: Once the cake has cooled, spread the frosting evenly over the top of the cake.
