Kitchen Equipment Needed:

  • Baking sheet
  • Sharp knife
  • Cutting board
  • Aluminum foil or parchment paper
  • Pastry brush
  • Measuring spoons
  • Grater (for cheese)

Ingredients:

  • 4 large russet potatoes, washed and scrubbed
  • 3 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1½ cups shredded cheddar cheese
  • ½ cup sour cream
  • 4 green onions, sliced
  • 1 cup shredded mozzarella (optional)
  • 2 tbsp melted butter (optional)
  • Fresh parsley for garnish

Directions:

  1. Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with aluminum foil or parchment paper.
  2. Prepare the Potatoes: Slice each potato thinly, but be careful not to cut all the way through. Leave about ¼ inch uncut at the bottom of the potato so the slices stay connected.
  3. Season the Potatoes: In a small bowl, mix the olive oil, garlic powder, onion powder, paprika, salt, and pepper. Using a pastry brush, generously coat the sliced potatoes with the seasoned olive oil mixture, making sure to get between the slices.
  4. Bake the Potatoes: Place the potatoes on the prepared baking sheet. Bake for 45-55 minutes, or until the potatoes are tender inside and crispy on the outside. You can add the optional melted butter during the last 10 minutes for extra flavor.
  5. Add the Cheese: Remove the potatoes from the oven and sprinkle the shredded cheddar and mozzarella cheese over the top. Make sure the cheese gets into the slices for extra gooeyness. Return the potatoes to the oven for an additional 5-10 minutes, or until the cheese is melted and bubbly.
  6. Top and Serve: Once the cheese has melted, remove the potatoes from the oven. Top with sour cream, green onions, and a sprinkle of fresh parsley. Serve immediately and enjoy your loaded baked potatoes!
