Lemon Gooey Butter Cookies are delightfully soft and chewy cookies that are filled with a bright and zesty lemon flavor. They’re not overly sweet or heavy either. I think they’re a perfect springtime or summer treat, and if you’re not a lemon fan, feel free to use another citrus flavor.

They will still be undeniably delicious! If you’re looking for a light and refreshing dessert that’s not overly sweet, you’ve come to the right place. When you make these light and pillowy cookies and pair them with a burst of lemony goodness, you get the perfect cookie. The addition of powdered sugar just sends them over the top. I’ve really been in the mood for a taste of sunshine and these dreamy cookies remind me of warm, sunny days. Not a fan of lemon? Don’t worry, they’re still delicious with any citrus flavor you prefer.

Kitchen Equipment Needed:

  • Mixing bowls
  • Electric mixer
  • Measuring cups and spoons
  • Spatula
  • Baking sheets
  • Parchment paper
  • Cooling rack

Ingredients:

  • 1 box lemon cake mix
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup powdered sugar (for rolling)

Directions:

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper and set aside.
  2. In a large mixing bowl, beat together the cream cheese and butter until smooth and creamy.
  3. Add the egg and vanilla extract, and beat until well combined.
  4. Add the lemon cake mix to the bowl and mix until fully incorporated and a dough forms.
  5. Cover the bowl with plastic wrap and chill the dough in the refrigerator for at least 30 minutes to make it easier to handle.
  6. Once the dough is chilled, scoop tablespoon-sized portions and roll them into balls.
  7. Roll each ball in powdered sugar until fully coated.
  8. Place the coated dough balls onto the prepared baking sheets, spacing them about 2 inches apart.
  9. Bake for 10-12 minutes, or until the edges are set and the tops are crackled. The centers will still be soft and slightly gooey.
  10. Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a cooling rack to cool completely.
