  3. 9×13 inch baking dish
  4. Saucepan
  5. Whisk

  7. Zester or grater

Ingredients:

For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 3/4 cup unsalted butter, softened

For the Filling:

  • 16 ounces cream cheese, softened
  • 4 large eggs
  • 1 1/4 cups granulated sugar
  • 1/2 cup fresh lemon juice
  • Zest of 2 lemons
  • 2 tablespoons all-purpose flour
  • Powdered sugar, for dusting (optional)

Directions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish and set aside.
  2. Prepare the Crust: In a mixing bowl, combine the flour, powdered sugar, and softened butter. Mix until well combined and crumbly. Press the mixture evenly into the bottom of the prepared baking dish. Bake the crust in the preheated oven for 15-20 minutes, or until lightly golden brown. Remove from the oven and let it cool slightly.
  3. Make the Filling: While the crust is cooling, prepare the filling. In a large mixing bowl, beat the softened cream cheese until smooth. Add the eggs, one at a time, beating well after each addition. Gradually add the granulated sugar, lemon juice, lemon zest, and flour, beating until smooth and creamy.
  4. Assemble and Bake: Pour the cream cheese filling over the slightly cooled crust, spreading it evenly. Return the baking dish to the oven and bake for 25-30 minutes, or until the edges are set and the center is slightly jiggly. Remove from the oven and let it cool completely at room temperature.
  5. Chill and Serve: Once cooled, refrigerate the lemon bars for at least 2 hours, or until firm. Before serving, dust with powdered sugar if desired. Cut into squares and serve chilled. Enjoy the creamy, citrusy goodness!
