Directions

  1. Cook the Pasta:
    • Bring a large pot of salted water to a boil. Add the rotini pasta and cook according to the package instructions until al dente. Drain the pasta and rinse with cold water to stop the cooking process. Set aside to cool.
  2. Prepare the Dressing:
    • In a medium bowl, whisk together the mayonnaise, sour cream, apple cider vinegar, sugar, salt, and pepper until smooth. Set aside.
  3. Layer the Salad:
    • In a large, clear serving bowl, layer the ingredients in the following order:
      1. Cooled pasta
      2. Shredded carrots
      3. Diced cucumber
      4. Halved cherry tomatoes
      5. Diced red bell pepper
      6. Thawed peas
      7. Finely chopped red onion
      8. Shredded cheddar cheese
  4. Add the Dressing:
    • Pour the prepared dressing evenly over the top layer of cheese. Use a spoon to gently spread it out, ensuring it covers the entire surface.
  5. Chill the Salad:
    • Cover the bowl with plastic wrap and refrigerate for at least 2 hours to allow the flavors to meld together.
