- Whisk

Ingredients:
For the Filling:
- 6-8 large fresh peaches, peeled, pitted, and sliced (about 6 cups)
- 1 cup granulated sugar
- 1/2 cup light brown sugar, packed
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- 1/4 cup cornstarch
- 1/4 cup water
For the Cobbler Topping:
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar, packed
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1 cup unsalted butter, chilled and cut into small pieces
- 1/2 cup boiling water
For the Top:
- 3 tablespoons granulated sugar
- 1 teaspoon ground cinnamon
Directions:
- Prepare the Peaches:
- Preheat your oven to 425°F (220°C).
- In a large mixing bowl, combine the sliced peaches, granulated sugar, light brown sugar, ground cinnamon, ground nutmeg, vanilla extract, and lemon juice. Toss to coat the peaches evenly.
- Cook the Peach Filling:
- Transfer the peach mixture to a medium saucepan and cook over medium heat until the peaches release their juices and the mixture begins to simmer.
- In a small bowl, whisk together the cornstarch and water until smooth. Pour this mixture into the simmering peaches and cook for another 2-3 minutes, until the filling thickens.
- Pour the peach filling into a 9×13-inch baking dish and spread it out evenly.
- Prepare the Cobbler Topping:
- In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, light brown sugar, baking powder, and salt.
- Add the chilled butter pieces to the flour mixture. Using a pastry cutter or two knives, cut the butter into the flour until the mixture resembles coarse crumbs.
- Pour the boiling water into the flour mixture and stir until just combined.
- Assemble the Cobbler:
- Drop spoonfuls of the cobbler topping over the peach filling. Use a spoon to spread the topping evenly, leaving some gaps for the filling to bubble through.
- In a small bowl, mix together the 3 tablespoons of granulated sugar and 1 teaspoon of ground cinnamon. Sprinkle this mixture over the cobbler topping.
- Bake the Cobbler:
- Bake the cobbler in the preheated oven for 35-40 minutes, or until the topping is golden brown and the filling is bubbling around the edges.
- Cool and Serve:
- Allow the cobbler to cool for at least 15 minutes before serving. Serve warm, preferably with a scoop of vanilla ice cream.
