Easy No-Bake Chocolate Oat Bars are a delightfully chewy treat that’s layered with a rich chocolate filling and a crunchy oat crust. They’re not heavy or overly sweet either. I think they’re perfect for any time of year, and if you’re not a chocolate fan, feel free to experiment with other flavors.

It will still be undeniably delicious! If you’re looking for a simple & satisfying dessert that doesn’t require baking, you’ve come to the right place. When you make a chewy oat base and pair it with a creamy chocolate filling, you get the perfect bar. The addition of a sprinkle of sea salt just sends it over the top. I’ve really been in the mood for quick and easy treats and these dreamy bars fit the bill perfectly. Not a fan of chocolate? Don’t worry, they’re still delicious with other fillings.

Kitchen Equipment Needed:

  • Large mixing bowl
  • Medium saucepan
  • 9×13-inch baking dish or pan
  • Spatula
  • Measuring cups and spoons
  • Parchment paper

Ingredients:

For the Oat Base:

  • 1 cup unsalted butter
  • 1/2 cup brown sugar, packed
  • 1 teaspoon vanilla extract
  • 3 cups rolled oats

For the Chocolate Filling:

  • 1 cup semisweet chocolate chips
  • 1/2 cup peanut butter (or any nut butter of your choice)

Directions:

  1. Prepare the Baking Dish:
    • Line a 9×13-inch baking dish or pan with parchment paper, leaving some overhang on the sides for easy removal.
  2. Make the Oat Base:
    • In a medium saucepan over medium heat, melt the unsalted butter. Add the brown sugar and vanilla extract, stirring until the sugar is dissolved and the mixture is smooth.
    • Add the rolled oats to the butter mixture and cook for 2-3 minutes, stirring constantly until the oats are well coated.
  3. Create the Bottom Layer:
    • Pour half of the oat mixture into the prepared baking dish. Use a spatula to press it down evenly, creating a compact layer.
  4. Prepare the Chocolate Filling:
    • In a microwave-safe bowl, combine the semisweet chocolate chips and peanut butter. Microwave in 30-second intervals, stirring after each interval, until the mixture is smooth and well combined.
  5. Assemble the Bars:
    • Pour the chocolate filling over the oat layer in the baking dish. Use a spatula to spread it evenly.
    • Sprinkle the remaining oat mixture over the chocolate layer, gently pressing it down with the spatula.
  6. Chill the Bars:
    • Refrigerate the bars for at least 2 hours, or until they are firm and set.
  7. Serve:
    • Once the bars are set, use the parchment paper overhang to lift them out of the baking dish. Cut into squares or bars and serve.
