  • Measuring cups and spoons

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 4 tbsp unsalted butter, divided
  • 6 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/2 cup chicken broth
  • 1 tbsp lemon juice
  • Fresh parsley, chopped (for garnish)

Directions

  1. Season the Chicken: Season the chicken breasts with salt and black pepper on both sides.
  2. Sear the Chicken: Heat the olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for about 5-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. Make the Garlic Butter Sauce: In the same skillet, reduce the heat to medium and add 2 tablespoons of butter. Once melted, add the minced garlic and cook for about 1 minute until fragrant. Stir in the dried thyme and rosemary.
  4. Add the Broth and Lemon Juice: Pour in the chicken broth and lemon juice, scraping up any browned bits from the bottom of the skillet. Let the sauce simmer for about 2-3 minutes.
  5. Finish the Sauce: Add the remaining 2 tablespoons of butter to the skillet and stir until melted and the sauce is smooth.
  6. Combine Chicken and Sauce: Return the chicken breasts to the skillet, spooning the garlic butter sauce over the top. Cook for an additional 2-3 minutes to let the flavors meld.
  7. Serve: Garnish with chopped fresh parsley and serve the garlic butter chicken warm.
