I think it’s a perfect dish for a family dinner or a potluck gathering, and if you’re not a fan of certain vegetables, feel free to omit them or swap them out.

It will still be undeniably delicious! If you’re looking for a comforting yet light meal that’s not overly complicated, you’ve come to the right place. When you combine tender chicken with a mix of beans, corn, and a creamy, cheesy sauce, you get a dish that’s both satisfying and festive. The addition of spices and fresh cilantro just sends it over the top. I’ve really been in the mood for some bold, zesty flavors and this vibrant casserole reminds me of a fiesta. Kitchen Equipment Needed:

  • Large skillet
  • Mixing bowls
  • Baking dish (9×13 inch)
  • Cutting board
  • Knife
  • Measuring cups and spoons
  • Wooden spoon or spatula
  • Aluminum foil (optional)

Ingredients:

  • 2 cups cooked chicken, shredded or cubed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup cooked rice
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 packet taco seasoning
  • 1/4 cup chopped fresh cilantro (optional)
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced

Directions:

  1. Preheat Oven:
    • Preheat your oven to 350°F (175°C).
  2. Prepare Vegetables:
    • In a large skillet, heat the olive oil over medium heat.
    • Add the chopped onion, red bell pepper, green bell pepper, and garlic. Sauté until the vegetables are tender, about 5-7 minutes.
  3. Combine Ingredients:
    • In a large mixing bowl, combine the cooked chicken, black beans, corn, diced tomatoes with green chilies, cooked rice, and sautéed vegetables.
    • Add the sour cream, taco seasoning, salt, and pepper. Stir until everything is well mixed.
  4. Assemble Casserole:
    • Transfer the mixture to a 9×13 inch baking dish.
    • Sprinkle the shredded cheddar and Monterey Jack cheeses evenly over the top.
  5. Bake:
    • Cover the dish with aluminum foil (optional, to prevent over-browning).
    • Bake in the preheated oven for 20 minutes.
    • Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  6. Garnish and Serve:
    • Once baked, remove the casserole from the oven and let it cool for a few minutes.
