Easy Strawberry Mango Popsicles are a vibrant and refreshing treat that’s bursting with the natural sweetness of fresh fruit. They’re not heavy or overly sweet either.

I think they’re perfect for a hot summer day or a fun dessert for any gathering. If you’re not a fan of strawberries or mangoes, feel free to substitute with your favorite fruits. They will still be undeniably delicious! If you’re looking for a light & fruity dessert that’s not overly sweet, you’ve come to the right place. When you combine fresh strawberries and mangoes and freeze them into a delightful popsicle, you get the perfect summer treat. The addition of honey just sends it over the top. I’ve really been in the mood for refreshing desserts, and these popsicles remind me of sunny summer days. Not a fan of strawberries or mangoes? Don’t worry, they’re still delicious with your favorite fruits.

Kitchen Equipment Needed

  • Blender or food processor
  • Popsicle molds
  • Popsicle sticks
  • Measuring cups and spoons

Ingredients

  • 2 cups fresh strawberries, hulled and chopped
  • 2 cups fresh mango, peeled and chopped
  • 2 tablespoons honey or agave syrup (optional)
  • 1/2 cup water (optional, for blending)

Directions

  1. Prepare the Strawberry Layer:
    • In a blender or food processor, puree the chopped strawberries until smooth. If needed, add a little water to help blend. Taste and add 1 tablespoon of honey or agave syrup if desired for sweetness.
  2. Prepare the Mango Layer:
    • Rinse the blender or food processor, then puree the chopped mango until smooth. If needed, add a little water to help blend. Taste and add 1 tablespoon of honey or agave syrup if desired for sweetness.
  3. Assemble the Popsicles:
    • Pour the strawberry puree into the popsicle molds, filling them about halfway. Tap the molds gently on the counter to remove any air bubbles.
    • Carefully pour the mango puree over the strawberry layer, filling the molds to the top. Insert popsicle sticks into the molds.
  4. Freeze:
    • Place the popsicle molds in the freezer and freeze for at least 4-6 hours or until completely solid.
  5. Serve:
    • To release the popsicles from the molds, run warm water over the outside of the molds for a few seconds. Gently pull the popsicles out and enjoy!
