When you combine fresh strawberries and mangoes and freeze them into a delightful popsicle, you get the perfect summer treat. The addition of honey just sends it over the top. Kitchen Equipment Needed
- Blender or food processor
- Popsicle molds
- Popsicle sticks
- Measuring cups and spoons
Ingredients
- 2 cups fresh strawberries, hulled and chopped
- 2 cups fresh mango, peeled and chopped
- 2 tablespoons honey or agave syrup (optional)
- 1/2 cup water (optional, for blending)
Directions
- Prepare the Strawberry Layer:
- In a blender or food processor, puree the chopped strawberries until smooth. If needed, add a little water to help blend. Taste and add 1 tablespoon of honey or agave syrup if desired for sweetness.
- Prepare the Mango Layer:
- Rinse the blender or food processor, then puree the chopped mango until smooth. If needed, add a little water to help blend. Taste and add 1 tablespoon of honey or agave syrup if desired for sweetness.
- Assemble the Popsicles:
- Pour the strawberry puree into the popsicle molds, filling them about halfway. Tap the molds gently on the counter to remove any air bubbles.
- Carefully pour the mango puree over the strawberry layer, filling the molds to the top. Insert popsicle sticks into the molds.
- Freeze:
- Place the popsicle molds in the freezer and freeze for at least 4-6 hours or until completely solid.
- Serve:
- To release the popsicles from the molds, run warm water over the outside of the molds for a few seconds. Gently pull the popsicles out and enjoy!
