Ingredients
- 4 large zucchinis, thinly sliced lengthwise
- 1 tablespoon olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 pound ground turkey or beef
- 1 can (28 ounces) crushed tomatoes
- 1 can (6 ounces) tomato paste
- 1 can (15 ounces) tomato sauce
- 1/4 cup chopped fresh basil
- 1/4 cup chopped fresh parsley
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 container (15 ounces) ricotta cheese or cottage cheese
- 1 large egg
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
Directions
- Prepare the Zucchini:
- Preheat your oven to 375°F (190°C). Use a mandoline slicer or a sharp knife to thinly slice the zucchinis lengthwise. Lay the slices on paper towels and sprinkle with salt. Let sit for 10 minutes to draw out excess moisture. Pat dry with additional paper towels.
- Cook the Meat Sauce:
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute. Add the ground turkey or beef and cook until browned. Drain any excess fat.
- Make the Sauce:
- Stir in the crushed tomatoes, tomato paste, tomato sauce, basil, parsley, oregano, salt, and pepper. Simmer the sauce for about 20 minutes, stirring occasionally.
- Prepare the Cheese Mixture:
- In a medium mixing bowl, combine the ricotta cheese (or cottage cheese) with the egg. Mix until smooth and well combined.
- Assemble the Lasagna:
- Spread a thin layer of the meat sauce on the bottom of a 9×13 inch baking dish. Place a layer of zucchini slices over the sauce. Spread a layer of the ricotta mixture over the zucchini, followed by a layer of shredded mozzarella. Repeat the layers, ending with a final layer of meat sauce and topping with the remaining mozzarella and Parmesan cheese.
- Bake the Lasagna:
- Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 20 minutes, or until the cheese is bubbly and golden brown.
- Let It Rest:
- Remove the lasagna from the oven and let it rest for about 10 minutes before slicing and serving.
