Directions

  1. Prepare the Ingredients: Start by chopping the onion and mincing the garlic. Cut the butter into small pieces.
  2. Layer the Ingredients in the Slow Cooker: Place the chicken breasts at the bottom of the slow cooker. Add the chopped onion and minced garlic on top. Pour the chicken broth and cream of chicken soup over the chicken. Stir gently to combine.
  3. Add the Vegetables and Seasonings: Add the frozen peas, carrots, and corn to the slow cooker. Sprinkle the dried thyme, dried parsley, salt, and pepper over the mixture.
  4. Cook the Chicken: Cover the slow cooker and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is fully cooked and tender.
  5. Shred the Chicken: Once the chicken is cooked, use two forks to shred it into bite-sized pieces right in the slow cooker.
  6. Prepare the Dumplings: Open the can of refrigerated biscuit dough and cut each biscuit into quarters. Add the biscuit pieces to the slow cooker, gently pressing them down into the broth.
  7. Add the Butter: Dot the top of the biscuit pieces with the small pieces of butter.
  8. Cook the Dumplings: Cover the slow cooker and cook on high for an additional 1-2 hours, or until the biscuit dough is cooked through and fluffy.
