Ingredients:
- 2 large onions, sliced into 1/4-inch rings
- 1 cup all-purpose flour
- 2 large eggs
- 1/4 cup milk
- 2 cups panko breadcrumbs
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Cooking spray
Instructions:
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper or a wire rack. Separate the onion slices into rings and set aside. Place the flour in a shallow bowl. In another bowl, whisk together the eggs and milk. In a third bowl, combine the panko breadcrumbs, paprika, garlic powder, salt, and pepper. Dredge each onion ring in the flour, shaking off excess, then dip into the egg mixture, and coat thoroughly in the breadcrumb mixture.
