Saddle up for a taste adventure with these hearty Cowboy Cookies. Packed with oats, chocolate chips, pecans, and coconut, these cookies are perfect for satisfying your sweet tooth and fueling your next outdoor adventure.

Whether you’re hitting the trail or cozying up by the campfire, these cookies are sure to be a hit with cowboys and cowgirls alike.

Kitchen Equipment Needed:

  1. Mixing bowls
  2. Electric mixer (optional)
  3. Baking sheets
  4. Parchment paper or silicone baking mats
  5. Wire cooling rack

Ingredients:

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups old-fashioned oats
  • 1 cup semisweet chocolate chips
  • 1 cup chopped pecans
  • 1/2 cup shredded coconut (sweetened or unsweetened, depending on preference)

Directions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats.
  2. Cream Butter and Sugars: In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. You can use an electric mixer for this step if desired.
  3. Add Eggs and Vanilla: Beat in the eggs, one at a time, until well combined. Stir in the vanilla extract.
  4. Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
  5. Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in Mix-Ins: Gently fold in the oats, chocolate chips, chopped pecans, and shredded coconut until evenly distributed throughout the dough.
  7. Portion Dough: Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake: Place the baking sheets in the preheated oven and bake for 10-12 minutes, or until the edges are golden brown and the centers are set.
