Cottage Cheese Queso Dip is a creamy, protein-packed twist on the classic cheese dip. It’s rich and satisfying, blending cottage cheese with bold Tex-Mex flavors to create a healthier yet indulgent snack. Ingredients

  • 2 cups cottage cheese (preferably small curd)
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 small jalapeño, finely diced (optional for heat)
  • 1 tsp ground cumin
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ cup milk (or more for desired consistency)
  • 1 small Roma tomato, finely diced
  • 2 tbsp fresh cilantro, chopped
  • ¼ tsp salt (adjust to taste)
  • ¼ tsp freshly ground black pepper

Directions

Step 1: Blend the Base

  1. In a blender or food processor, blend the cottage cheese until smooth and creamy.
  2. Add a splash of milk if needed to achieve a smooth texture.

Step 2: Heat the Dip

  1. Transfer the blended cottage cheese to a medium saucepan over medium heat.
  2. Stir in the shredded cheddar and Monterey Jack cheese, whisking until melted and fully incorporated.

Step 3: Add the Spices

  1. Mix in the cumin, smoked paprika, garlic powder, onion powder, salt, and black pepper. Adjust seasoning to taste.

Step 4: Add Fresh Ingredients

  1. Stir in the diced jalapeño (if using) and tomato. Heat for another 2-3 minutes to soften the tomato.

Step 5: Garnish and Serve

  1. Remove the dip from heat and stir in the fresh cilantro.
  2. Serve warm with tortilla chips, veggie sticks, or crusty bread.
