Directions:

- Prepare the Fries: In a large bowl, toss the potato fries with olive oil, paprika, garlic powder, onion powder, chili powder, salt, and black pepper until evenly coated.
- Bake the Fries: Spread the seasoned fries in a single layer on the prepared baking sheet. Bake for 20-25 minutes, turning halfway through, until they are golden brown and crispy.
- Make the Cheese Sauce: While the fries are baking, melt the butter in a medium saucepan over medium heat. Whisk in the flour and cook for about 1 minute until bubbly. Gradually whisk in the milk and continue cooking, whisking constantly, until the mixture thickens, about 3-5 minutes.
- Add Cheese and Seasoning: Remove the saucepan from heat and stir in the shredded cheddar cheese until melted and smooth. Add the paprika and cayenne pepper (if using). Season with salt to taste.
