Ingredients:

For the Fries:

  • 4 large russet potatoes, cut into fries
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

For the Nacho Cheese Sauce:

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup whole milk
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt, to taste

Directions:

  1. Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Prepare the Fries: In a large bowl, toss the potato fries with olive oil, paprika, garlic powder, onion powder, chili powder, salt, and black pepper until evenly coated.
  3. Bake the Fries: Spread the seasoned fries in a single layer on the prepared baking sheet. Bake for 20-25 minutes, turning halfway through, until they are golden brown and crispy.
  4. Make the Cheese Sauce: While the fries are baking, melt the butter in a medium saucepan over medium heat. Whisk in the flour and cook for about 1 minute until bubbly. Gradually whisk in the milk and continue cooking, whisking constantly, until the mixture thickens, about 3-5 minutes.
  5. Add Cheese and Seasoning: Remove the saucepan from heat and stir in the shredded cheddar cheese until melted and smooth. Add the paprika and cayenne pepper (if using). Season with salt to taste.
  6. Serve: Serve the crispy fries immediately with the warm nacho cheese sauce for dipping.
