Kitchen Equipment Needed:

  • Baking sheet
  • Large mixing bowl
  • Knife
  • Cutting board
  • Aluminum foil
  • Oven mitts

Ingredients:

  • 2 cups cooked chicken breast, shredded
  • 2 cups shredded Mexican blend cheese
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 small red onion, diced
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 8 large flour tortillas
  • Cooking spray
  • Optional: sour cream, salsa, and guacamole for serving

Directions:

  1. Preheat your oven: to 425°F (220°C). Line a baking sheet with aluminum foil and spray with cooking spray.
  2. Prepare the filling: In a large mixing bowl, combine the shredded chicken, 1 cup of cheese, diced bell peppers, diced red onion, olive oil, chili powder, cumin, garlic powder, salt, and pepper. Mix well to combine.
  3. Assemble the quesadilla: Place 4 tortillas on the prepared baking sheet, making sure they overlap slightly and cover the entire surface. Spread the chicken mixture evenly over the tortillas, leaving a small border around the edges. Sprinkle the remaining 1 cup of cheese over the chicken mixture. Top with the remaining 4 tortillas, pressing down gently to seal.
  4. Bake: Place another piece of aluminum foil over the quesadilla and press down gently. Place a second baking sheet on top to weigh it down. Bake in the preheated oven for 20 minutes.
  5. Finish and serve: Remove the top baking sheet and foil. Continue baking for an additional 5-10 minutes, or until the top is golden brown and crispy. Remove from the oven and let cool for a few minutes before cutting into squares. Serve with sour cream, salsa, and guacamole, if desired.
