Ingredients:
For the Chow Mein Sauce:
- 1/4 cup soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon rice vinegar
- 1 tablespoon brown sugar
- 1 teaspoon sesame oil
- 1 teaspoon cornstarch
- 1/4 cup chicken broth or water
For the Chicken Chow Mein:
- 8 ounces chow mein noodles (or substitute with spaghetti)
- 2 boneless, skinless chicken breasts, thinly sliced
- 2 tablespoons vegetable oil
- 3 cloves garlic, minced
- 1 teaspoon ginger, minced
- 1 onion, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 carrot, julienned
- 1 cup cabbage, thinly sliced
- 1 cup bean sprouts
- 2 green onions, chopped (for garnish)
- Sesame seeds (for garnish, optional)
Directions:
- Prepare the Chow Mein Sauce: In a small mixing bowl, whisk together the soy sauce, oyster sauce, hoisin sauce, rice vinegar, brown sugar, sesame oil, cornstarch, and chicken broth or water until well combined. Set aside.
- Cook the Noodles: Cook the chow mein noodles according to the package instructions until al dente. Drain and set aside.
- Stir-Fry the Chicken: Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat. Add the sliced chicken breasts and stir-fry until cooked through and no longer pink, about 5-6 minutes. Remove the chicken from the wok and set aside.
- Prepare the Vegetables: In the same wok or skillet, heat the remaining tablespoon of vegetable oil. Add the minced garlic and ginger, and stir-fry for about 30 seconds until fragrant. Add the sliced onion, red bell pepper, julienned carrot, and thinly sliced cabbage. Stir-fry for 3-4 minutes until the vegetables are crisp-tender.
- Combine the Ingredients: Return the cooked chicken to the wok. Add the cooked chow mein noodles and bean sprouts to the wok, tossing everything together until well combined.
- Add the Sauce: Pour the prepared Chow Mein Sauce over the chicken and noodles in the wok. Toss to coat evenly and cook for an additional 2-3 minutes, allowing the sauce to thicken and coat the ingredients.
- Garnish and Serve: Remove the Chicken Chow Mein from the heat. Garnish with chopped green onions and sesame seeds, if desired. Serve hot and enjoy the delicious flavors of this homemade stir-fry dish!
