Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder

  • 1/4 cup poppyseeds (optional)

  • 3/4 cup granulated sugar

  • 1/2 cup sliced almonds

Directions

  1. Preheat oven: Preheat your oven to 350°F (175°C). Line a loaf pan with parchment paper, leaving an overhang for easy removal, and lightly grease it.
  2. Mix dry ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and poppyseeds (if using). Set aside.
  3. Cream butter and sugar: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Add eggs and extracts: Beat in the eggs, one at a time, mixing well after each addition. Stir in the vanilla and almond extracts.
  5. Add sour cream: Mix in the sour cream or Greek yogurt until well combined.
  6. Combine dry and wet ingredients: Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Do not overmix.
  7. Fold in cherries and almonds: Gently fold in the pitted and halved cherries and sliced almonds.
  8. Pour into pan: Pour the batter into the prepared loaf pan, spreading it evenly.
  9. Bake: Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  10. Cool and serve: Allow the bread to cool in the pan for about 10 minutes before transferring it to a cooling rack to cool completely. Slice and enjoy!
