  1. Preheat the Oven: Preheat your oven to 400°F (200°C). Grease a muffin tin generously with non-stick spray or butter.
  2. Prepare the Mashed Potatoes: In a large mixing bowl, combine the mashed potatoes, shredded cheddar cheese, eggs, milk, sour cream, grated Parmesan cheese, and chopped green onions. Season with salt and pepper to taste. Mix well until all ingredients are thoroughly combined.
  3. Fill the Muffin Tin: Spoon the mashed potato mixture into the prepared muffin tin, filling each cup about 3/4 full. Use the back of the spoon to smooth the tops.
  4. Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the tops are golden brown and slightly crispy.
  5. Cool and Serve: Remove the muffin tin from the oven and let the puffs cool for a few minutes before carefully removing them. Serve warm.
