  • 1/2 cup corn (fresh, frozen, or canned)
  • 1/4 cup diced red bell pepper

  • 2 tablespoons chopped fresh cilantro
  • 1 lime, cut into wedges
  • Optional toppings: hot sauce, Greek yogurt, or shredded cheese

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Roast the Sweet Potatoes: Toss the diced sweet potatoes with olive oil and Cajun seasoning until evenly coated. Spread them in a single layer on the prepared baking sheet and roast for 20–25 minutes, flipping halfway through, until tender and slightly crispy.
