Breakfast Casserole is the perfect way to start your morning—hearty, filling, and easy to prepare in advance. This comforting dish brings together fluffy eggs, savory sausage, crispy vegetables, and melted cheese into one delightful bite.   • Mixing bowls
  • 9×13-inch baking dish
  • Whisk
  • Measuring cups and spoons

Ingredients:

  • 1 lb ground chicken sausage (or turkey sausage)
  • 8 large eggs
  • 2 cups milk (whole or 2%)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 bell pepper, diced
  • 1 small onion, diced
  • 3 cups cubed bread (French or sourdough)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil (for cooking veggies)
  • Optional: fresh parsley or green onions for garnish

Directions:

  1. Preheat the oven: Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish and set aside.
  2. Cook the sausage and vegetables: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the ground chicken sausage and cook until browned, breaking it up as it cooks. Remove from the skillet and set aside.
  3. Sauté the vegetables: In the same skillet, add another tablespoon of olive oil and sauté the diced bell pepper and onion until softened, about 5 minutes. Remove from heat.
  4. Whisk the egg mixture: In a large mixing bowl, whisk together the eggs, milk, garlic powder, onion powder, paprika, salt, and pepper.
  5. Assemble the casserole: In the prepared baking dish, evenly spread the cubed bread. Layer the cooked sausage and sautéed vegetables on top. Sprinkle with half of the shredded cheddar and mozzarella cheeses. Pour the egg mixture over the entire dish, ensuring the bread is well soaked. Sprinkle the remaining cheese on top.
  6. Refrigerate or bake: If making ahead, cover the casserole with plastic wrap and refrigerate overnight. If baking immediately, let the casserole sit for 10-15 minutes to allow the bread to absorb the egg mixture.
  7. Bake: Bake uncovered for 40-45 minutes, or until the eggs are fully set and the top is golden brown. If baking directly from the refrigerator, it may require an additional 10 minutes of baking time.
  8. Serve: Let the casserole rest for 5-10 minutes before cutting into squares. Garnish with fresh parsley or green onions if desired.
