  • Large pot
  • Baking dish (9×13 inch)
  • Wooden spoon
  • Measuring cups and spoons
  • Mixing bowls
  • Cheese grater

Ingredients

  • 1 lb ground beef
  • 1 medium onion, finely chopped
  • 1 clove garlic, minced
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 can (10 oz) diced tomatoes with green chilies, undrained
  • 1 can (6 oz) tomato paste
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/4 teaspoon black pepper
  • 1 package (8 oz) egg noodles
  • 1 cup sour cream
  • 1 cup cottage cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cups shredded cheddar cheese
  • Fresh parsley, chopped (for garnish)

Directions

  1. Prepare the Beef Mixture: In a large skillet over medium-high heat, cook the ground beef until browned, breaking it up with a wooden spoon. Drain any excess fat.
  2. Cook the Vegetables: Add the chopped onion and minced garlic to the skillet with the beef. Cook until the onion is translucent and the garlic is fragrant, about 5 minutes.
  3. Add the Tomatoes: Stir in the diced tomatoes, diced tomatoes with green chilies, tomato paste, salt, sugar, oregano, basil, and black pepper. Bring to a simmer and cook for 15 minutes, stirring occasionally.
  4. Cook the Pasta: While the beef mixture is simmering, bring a large pot of salted water to a boil. Add the egg noodles and cook according to the package instructions until al dente. Drain well.
  5. Prepare the Cheese Mixture: In a mixing bowl, combine the sour cream, cottage cheese, and grated Parmesan cheese.
  6. Assemble the Casserole: Preheat the oven to 350°F (175°C). In a greased 9×13 inch baking dish, layer half of the cooked noodles. Spread half of the cheese mixture over the noodles. Top with half of the beef mixture. Repeat the layers with the remaining noodles, cheese mixture, and beef mixture. Sprinkle the shredded cheddar cheese evenly over the top.
  7. Bake the Casserole: Cover the baking dish with foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 10-15 minutes, until the cheese is melted and bubbly.
  8. Serve: Let the casserole cool for a few minutes before serving. Garnish with fresh parsley if desired. Enjoy!
