Banana Berry French Toast is a delightful breakfast dish that’s packed with the natural sweetness of bananas and the tartness of fresh berries. It’s not heavy or overly sweet either. I think it’s a perfect way to start your day, and if you’re not a fan of berries, feel free to omit them or substitute with your favorite fruits.

 

It will still be undeniably delicious! If you’re looking for a light & fruity breakfast that’s not overly sweet, you’ve come to the right place. When you make fluffy French toast and pair it with the fresh flavors of banana and berries, you get the perfect breakfast. The addition of a drizzle of maple syrup just sends it over the top. I’ve really been in the mood for fresh and fruity breakfasts, and this delightful dish reminds me of sunny mornings. Not a fan of berries? Don’t worry, it’s still delicious without them.

Kitchen Equipment Needed

  • Large mixing bowl
  • Whisk
  • Skillet or griddle
  • Spatula
  • Measuring cups and spoons

Ingredients

  • 4 slices of bread (preferably thick-cut or brioche)
  • 2 large eggs
  • 1/2 cup milk (any type)
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 tablespoon butter or cooking spray
  • 1 banana, sliced

Directions

    • Cook for 2-3 minutes on each side or until golden brown and cooked through.
  4. Serve:
    • Transfer the cooked French toast to serving plates.
    • Top each slice with banana slices and mixed berries.
