Ingredients:
For the Flautas:
1 lb ground beef
1 small onion, finely chopped
2 cloves garlic, minced
1 tsp ground cumin
1 tsp chili powder
Salt and pepper to taste
1 cup shredded cheddar cheese
12 small flour tortillas
Cooking spray
For the Queso Dip:
2 tbsp butter
2 tbsp all-purpose flour
1 cup milk
1 1/2 cups shredded sharp cheddar cheese
1/2 cup diced tomatoes and green chilies (such as Rotel)
Salt to taste
Directions:
For the Flautas:
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
In a skillet over medium heat, cook the ground beef, onion, and garlic until the beef is browned and the onion is soft. Drain any excess fat.
Stir in the ground cumin, chili powder, salt, and pepper. Cook for another 2 minutes.
Remove from heat and stir in the shredded cheddar cheese until melted and well combined.
Place a spoonful of the beef mixture onto each tortilla, then roll tightly and place seam-side down on the prepared baking sheet.
Lightly spray the flautas with cooking spray to help them crisp up in the oven.
Bake for 15-20 minutes, or until the tortillas are golden and crispy.
For the Queso Dip:
In a small saucepan, melt the butter over medium heat.
Whisk in the flour and cook for 1 minute, until bubbly.
Gradually whisk in the milk, cooking until the mixture thickens, about 3-5 minutes.
Reduce heat to low and stir in the shredded cheese until melted and smooth.
Stir in the diced tomatoes and green chilies. Add salt to taste.
