Ingredients
  

For the Zucchini Bars

  • 2 cups grated zucchini (about two medium zucchinis) Make sure to squeeze out excess moisture.
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 cup chopped nuts (optional) Can substitute with chocolate chips or dried fruits.

For the Frosting

  • 1/2 cup unsweetened cocoa powder
  • 1 cup caramel sauce

Instructions
 

Preparation

  • Grate your zucchinis using a box grater or food processor; no need to peel.
  • In a large mixing bowl, combine the granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Whisk until well combined.
  • In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, cinnamon, and salt.
  • Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Fold in the grated zucchini and nuts, if using.

Baking

  • Preheat the oven to 350°F (175°C). Pour the batter into a greased 9x13-inch baking dish and smooth the top. Bake for about 30 minutes, or until a toothpick inserted into the center comes out clean.

Frosting

  • In a bowl, combine the unsweetened cocoa powder with the caramel sauce and mix until smooth.
  • Once the bars have cooled completely, spread the caramel frosting evenly over the top. Cut into squares and serve.

Notes

Store in an airtight container in the refrigerator for up to a week or freeze for up to three months. Thaw overnight in the fridge before serving.
