Ingredients
  

For the Crust

  • 1 pre-made pie crust 1 pre-made pie crust (store-bought or homemade) Use a pre-made crust for convenience.

For the Lemon Filling

  • 1 cup 1 cup granulated sugar
  • 1/4 cup 1/4 cup cornstarch
  • 2 cups 2 cups water
  • 4 large 4 large egg yolks (beaten)
  • 1/2 cup 1/2 cup freshly squeezed lemon juice Use fresh lemons for best flavor.
  • 2 tablespoons 2 tablespoons lemon zest
  • 1/4 cup 1/4 cup unsalted butter Substitute with plant-based margarine for Halal-friendly.

For the Meringue

  • 4 large 4 large egg whites
  • 1/4 teaspoon 1/4 teaspoon cream of tartar Ensure bowls and beaters are grease-free.
  • 1/2 cup 1/2 cup granulated sugar (for meringue)

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). If using a pre-made crust, follow the package instructions to bake until golden. For a homemade crust, roll out your dough, place it in a pie pan, and bake until lightly browned.

Make the Lemon Filling

  • In a medium saucepan, whisk together the sugar, cornstarch, and water until smooth. Cook over medium heat, continually stirring until the mixture thickens and begins to bubble.
  • Remove from heat and temper the beaten egg yolks by slowly adding a bit of the hot mixture to them. Then, stir the yolks back into the saucepan.
  • Return to low heat, add the lemon juice, zest, and butter. Stir until melted and well combined.
  • Pour the lemon filling into the baked pie crust and let it cool while you make the meringue.

Create the Meringue

  • In a clean mixing bowl, beat the egg whites and cream of tartar on medium speed until soft peaks form.
  • Gradually add the sugar, continuing to beat until the meringue is glossy and stiff peaks form.
  • Spread the meringue over the lemon filling, making sure to seal the edges to prevent it from shrinking. Create swirls for a beautiful presentation.

Bake

  • Bake in the preheated oven for about 10 minutes, or until the meringue is golden brown.
  • Allow it to cool completely before slicing to let the flavors meld together.

Notes

For an even zippier flavor, add an extra tablespoon of lemon zest. Keep a close eye on the oven so your meringue doesn’t over-brown.
