  • 1 pound boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 unit zest and juice of 1 lemon
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika (smoked or regular)
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Preparation

  • In a large bowl, combine the chicken pieces with olive oil, lemon zest, lemon juice, garlic powder, onion powder, paprika, salt, and pepper. Make sure every piece is well-coated. Let it marinate for at least 10 minutes—longer if you have time.
  • While the chicken marinates, preheat your air fryer to 400°F (200°C) for around 3-5 minutes.

Cooking

  • Place the marinated chicken bites in a single layer in the air fryer basket, giving them some space to cook evenly.
  • Air fry the chicken bites for about 10-12 minutes, flipping them halfway through, until they’re crispy and golden brown, with an internal temperature of 165°F (75°C).

Serving

  • Remove from the air fryer and garnish with freshly chopped parsley if desired. Serve warm with your choice of dipping sauce.

Notes

For added flavor, try adding a pinch of cayenne for some heat, or substituting lemon with orange for a sweet twist. Be sure to check the chicken at the 10-minute mark, as every air fryer works differently. Avoid overcrowding the basket for the best results. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for longer storage, reheating in the air fryer at 380°F (190°C) for about 5-7 minutes.
