  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 cup water
  • 1/4 cup granulated sugar
  • 1/4 cup vegetable oil
  • to taste powdered sugar for dusting
  • as needed oil for frying

Preparation

  • In a medium saucepan, combine water, sugar, and vegetable oil. Bring to a gentle boil over medium heat.
  • Once boiling, quickly add flour and baking powder, stirring vigorously until the mixture forms a ball and pulls away from the sides of the pan.
  • Remove the mixture from heat and allow it to cool slightly. Once the dough is manageable, use a spoon or a pastry bag to shape balls of dough.

Cooking

  • In a deep pot or fryer, heat oil to 350°F (175°C). Carefully drop dough balls into the hot oil.
  • Fry until golden brown—about 2-3 minutes per side.
  • Once fried, remove Zeppole and drain on paper towels. Dust generously with powdered sugar before serving.

Notes

For a lighter texture, avoid overmixing the dough. Add nutmeg or cinnamon for a twist. Store leftovers in an airtight container for up to 2 days.
