  • 1/2 cup canned pumpkin puree Make sure to use pure pumpkin puree.
  • 2 large eggs
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1 tbsp sugar Optional, for added sweetness.
  • a pinch salt

For the French Toast

  • 4 slices thick bread (brioche or challah) Hearty bread works best.
  • Maple syrup to taste for serving
  • Optional toppings whipped cream, chopped nuts, or powdered sugar Get creative with toppings!

Preparation

  • In a mixing bowl, combine pumpkin puree, eggs, milk, vanilla extract, cinnamon, nutmeg, sugar, and a pinch of salt. Whisk until the mixture is smooth and well-combined.

Cooking

  • Preheat a non-stick skillet or griddle over medium heat and lightly grease with butter or cooking spray.
  • Take your slices of bread and dip each one into the pumpkin batter, ensuring both sides are fully coated, but don’t let them soak too long to avoid sogginess.
  • Place the dipped bread slices onto the hot skillet. Cook for about 3-4 minutes on each side, or until they become golden brown and slightly crisp.

Serving

  • Once cooked, transfer to a plate and serve warm with maple syrup and your choice of toppings.

Notes

For best results, use thick bread, and experiment with additional mix-ins like chocolate chips or raisins. Keep warm in a low oven if making multiple servings.
