  • 14 ounces Udon Noodles, cooked according to package instructions
  • 2 tablespoons Vegetable Oil
  • 1 medium Carrot, julienned
  • 1 medium Bell Pepper, sliced
  • 1 cup Broccoli Florets
  • 1 medium Zucchini, sliced
  • 2 tablespoons Soy Sauce
  • 1 tablespoon Mirin (or a mix of sugar and water)
  • 1 tablespoon Sesame Oil
  • to taste Green Onions, for garnish, chopped

Preparation

  • Start by preparing the udon noodles according to the package instructions. Drain and set aside.
  • In a large skillet or wok, heat the vegetable oil over medium-high heat.
  • Add the julienned carrot and sliced bell pepper. Stir-fry for about 2 minutes, then add in the broccoli florets and zucchini. Cook for an additional 3–4 minutes until the vegetables are tender but still crisp.
  • Now it’s time to introduce the cooked udon noodles to the pan. Toss everything together, allowing the noodles to absorb some of the flavors.
  • Pour the soy sauce, mirin, and sesame oil over the noodle mixture. Stir well for about 2–3 minutes until everything is evenly coated and heated through.
  • Remove from heat and serve hot, garnished with chopped green onions. Enjoy your delicious homemade Yaki Udon!

Notes

For ingredient substitutions, consider swapping out veggies based on availability. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or skillet.
