  • 4 cups whole wheat flour Feel free to mix with all-purpose flour for a lighter texture.
  • 1 teaspoon baking soda Key leavening agent for the bread.
  • 1 teaspoon salt Enhances flavor.
  • 1 ¾ cups buttermilk Can substitute with milk mixed with vinegar or lemon juice.

Preparation

  • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • In a large bowl, whisk together the whole wheat flour, baking soda, and salt until well combined.
  • Make a well in the center of the dry ingredients and pour in the buttermilk. Mix until the dough starts to come together.
  • Turn the dough out onto a lightly floured surface and gently knead it for just a couple of minutes until it forms a cohesive ball. Avoid over-kneading!
  • Shape the dough into a round loaf and place it on the prepared baking sheet.
  • Using a sharp knife, make a deep cross on the top of the loaf to help it rise and bake evenly.
  • Bake in the preheated oven for about 30-40 minutes, until the bread is golden brown and sounds hollow when tapped on the bottom.
  • Allow the bread to cool on a wire rack before slicing. Enjoy it warm with your favorite toppings!

Notes

Store the bread at room temperature wrapped in a kitchen towel for up to 3 days, or in an airtight container for up to a week. For longer storage, freeze wrapped tightly in plastic wrap and then foil for up to 3 months. To reheat, slice and toast or warm in the oven at 350°F (175°C).
