Whole Roasted Cauliflower With Butter Sauce

This whole roasted cauliflower with butter sauce is a quick and delicious side dish. When I'm making dinner and need a great veggie side that doesn't take a lot of effort, this recipe is one of my favorite side dishes.

Ingredients
  

  • 1 medium-large head of cauliflower
  • 2 tbsp unsalted butter melted
  • 2 tbsp olive oil or avocado oil
  • 3 tbsp Parmesan cheese
  • 1 tsp Italian seasoning
  • 3 cloves garlic minced
  • 2 tbsp fresh parsley finely chopped
  • ½ tsp salt to taste
  • ¼ tsp pepper to taste

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Prepare the cauliflower by cutting off the bottom leaves and as much of the thick white stalk as possible.
  • In a small bowl, mix together melted butter, oil, minced garlic, Italian seasoning, salt, and pepper.
  • Place the cauliflower in a Dutch oven or baking dish, core side down. Brush the butter mixture over the cauliflower.
  • Place the cauliflower head in a preheated oven, covered with aluminum foil or parchment paper, and bake for 30 minutes. After removing the foil, bake for an extra 10-20 minutes.
  • Add 1-2 tablespoons of parmesan cheese on top of the cauliflower
  • Adjust the oven to high broil and continue roasting for an additional 3-5 minutes, or until the cauliflower reaches a golden brown color
  • Garnish with additional fresh parsley and serve with your preferred protein. Enjoy your delicious dish
  • If you prefer a spicy flavor, swap out the Italian Seasoning for a Taco Seasoning Blend or add a sprinkle of red pepper flakes.
  • To make a vegan version, substitute butter with olive oil and replace parmesan cheese with 2 tablespoons of nutritional yeast
