Preheat your oven to 400°F (200°C).
Prepare the cauliflower by cutting off the bottom leaves and as much of the thick white stalk as possible.
In a small bowl, mix together melted butter, oil, minced garlic, Italian seasoning, salt, and pepper.
Place the cauliflower in a Dutch oven or baking dish, core side down. Brush the butter mixture over the cauliflower.
Place the cauliflower head in a preheated oven, covered with aluminum foil or parchment paper, and bake for 30 minutes. After removing the foil, bake for an extra 10-20 minutes.
Add 1-2 tablespoons of parmesan cheese on top of the cauliflower
Adjust the oven to high broil and continue roasting for an additional 3-5 minutes, or until the cauliflower reaches a golden brown color
Garnish with additional fresh parsley and serve with your preferred protein. Enjoy your delicious dish
If you prefer a spicy flavor, swap out the Italian Seasoning for a Taco Seasoning Blend or add a sprinkle of red pepper flakes.
To make a vegan version, substitute butter with olive oil and replace parmesan cheese with 2 tablespoons of nutritional yeast
