For the brownies

  • 1/2 cup unsalted butter
  • 8 ounces white chocolate, chopped
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt

For the raspberry swirl

  • 1 cup fresh raspberries
  • 1 tablespoon sugar (for raspberries)
  • 1 teaspoon cornstarch (for raspberries)

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Grease a 9x9 inch baking pan or line it with parchment paper.
  • In a medium saucepan over low heat, combine the unsalted butter and chopped white chocolate. Stir frequently until melted and smooth, then remove from heat.
  • Mix in the granulated sugar until fully combined. Beat in the eggs one at a time, followed by the vanilla extract.
  • In a separate bowl, whisk together the all-purpose flour and salt. Gradually fold this mixture into your chocolate batter until just combined.
  • In a small bowl, gently toss the fresh raspberries with sugar and cornstarch.

Layering and Baking

  • Pour half of the brownie batter into the prepared pan. Dot with half of the raspberries, followed by the rest of the brownie batter. Top with the remaining raspberries.
  • Using a knife, swirl through the batter gently to create a marbled effect.
  • Bake for 25 to 30 minutes until the edges are firm and the center is slightly soft.

Cooling and Serving

  • Allow the brownies to cool in the pan for at least 10 minutes before slicing into squares.

Notes
