  • 1 cup cottage cheese Use low-fat or regular cottage cheese.
  • 1/2 cup cocoa powder
  • 1/4 cup almond flour Can substitute with oat flour for a nut-free option.
  • 1/2 cup sweetener of choice (honey, maple syrup, or stevia) Adjust based on personal preference.
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Preparation

  • Preheat your oven to 350°F (180°C).
  • In a large mixing bowl, combine the cottage cheese, eggs, and vanilla extract. Blend until smooth.
  • In a separate bowl, whisk together the cocoa powder, almond flour, baking powder, and salt.
  • Gradually mix the dry ingredients into the wet mixture. Stir in your sweetener until well combined.
  • Prepare an 8x8 inch (20x20 cm) baking dish by lining it with parchment paper or greasing it with non-stick spray.
  • Pour the brownie batter into the prepared dish and smooth the top with a spatula.

Baking

  • Bake in the preheated oven for 20-25 minutes, checking for doneness with a toothpick.

Cooling and Serving

  • Allow brownies to cool in the pan for about 10 minutes before lifting them out and cutting into squares. Serve warm or at room temperature.

Notes

Store in an airtight container in the refrigerator for up to a week or freeze individually for up to three months. Reheat by thawing or microwave for a few seconds.
