  • ½ cup unsweetened cocoa powder
  • ½ cup milk

  • 3 cups quick-cooking oats Do not use regular rolled oats
  • ½ cup creamy peanut butter
  • 1 teaspoon vanilla extract
  • 1 pinch salt Enhances flavor

Preparation

  • Line a baking sheet with parchment paper to prevent sticking and set it aside.
  • In a medium saucepan over medium heat, combine sugar, cocoa powder, milk, and butter. Stir until the mixture begins to boil, and allow it to boil for about 1 minute while stirring constantly.
  • Remove the saucepan from the heat and quickly stir in the peanut butter, vanilla extract, and a pinch of salt until well mixed.
  • Stir in the quick-cooking oats until evenly coated with the chocolate mixture.
  • Using a spoon or a cookie scoop, drop spoonfuls of the mixture onto the prepared baking sheet. Allow them to cool at room temperature for about 30 minutes until set.
  • Once set, enjoy your delicious no-bake cookies!

Notes

These cookies can be stored in an airtight container at room temperature for up to a week. For longer storage, refrigerate them or freeze them for up to three months.
