  • 4 cups fresh corn kernels (grilled or boiled) If fresh corn is unavailable, frozen corn may be used.
  • 1 cup diced red bell pepper
  • 1 cup diced cucumber
  • 1/2 cup chopped red onion
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup crumbled feta cheese Optional

Dressing

  • 2 tablespoons juice of limes
  • 1/4 cup olive oil
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Preparation

  • Cook the Corn: If using fresh corn, grill or boil the corn until tender and grill-marked. Allow it to cool slightly before cutting the kernels off the cob.
  • Prepare the Vegetables: While the corn cools, chop the red bell pepper, cucumber, and red onion into bite-sized pieces, and chop the cilantro.
  • Make the Dressing: In a small bowl, whisk together the lime juice, olive oil, chili powder, salt, and pepper until well combined.
  • Combine Ingredients: In a large mixing bowl, combine the corn kernels, diced vegetables, and half of the cilantro. Drizzle the dressing over the mixture and gently toss everything together until well-coated.
  • Garnish: Top the salad with crumbled feta, remaining cilantro, and an extra sprinkle of chili powder if desired.
  • Serve: Enjoy immediately or let it chill in the refrigerator for about 30 minutes to enhance the flavors before serving!

Notes

Use fresh corn for the best flavor, feel free to customize the dressing, and avoid overmixing to keep the texture intact.
