Vegetarian Stuffed Cabbage Rolls

Ingredients
  

Cabbage and Filling

  • 1 large head green cabbage For wrapping the filling
  • 1 cup uncooked rice (any variety) Cook according to package instructions
  • 1 can black beans Drained and rinsed; can use any beans of your choice
  • 1 cup corn Can be frozen or fresh
  • 1 medium onion Finely chopped
  • 3 cloves garlic Minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • to taste Salt and pepper
  • 1 jar marinara sauce About 24 oz
  • 1 tablespoon olive oil
  • to taste fresh herbs (parsley or cilantro) Optional for garnish

Instructions
 

Preparation

  • Bring a large pot of water to a boil. Carefully peel off the cabbage leaves and add them to the boiling water for about 2-3 minutes until soft. Remove and place on a clean kitchen towel to dry.
  • In a separate pot, cook the rice according to package instructions. Once cooked, remove from heat and let cool slightly.

Cooking

  • In a skillet, heat the olive oil over medium heat. Add the chopped onions and sauté until translucent (approximately 5-7 minutes). Add the minced garlic and cook for another minute.
  • In a large mixing bowl, combine the cooked rice, black beans, corn, sautéed onion and garlic, ground cumin, smoked paprika, salt, and pepper. Mix until well incorporated.
  • Take a cabbage leaf and place a generous spoonful of the filling at the base. Roll it up tightly, tucking in the sides.
  • Preheat your oven to 350°F (175°C). Pour a layer of marinara sauce at the bottom of a baking dish. Place the stuffed cabbage rolls seam side down on top of the sauce and pour extra sauce over the rolls.
  • Cover the dish with foil and bake for 30 minutes. Then remove the foil and bake for an additional 15 minutes to allow the tops to brown slightly.
  • Remove from the oven, let cool for a few minutes, and garnish with fresh herbs before serving.

Notes

Customize the filling with quinoa or lentils for different flavors. Adjust spice levels with jalapeños or red pepper flakes. Avoid overcooking the cabbage leaves.
