Ingredients
  

For the filling

  • 1 cup fresh spinach leaves (washed and shredded)
  • ½ cup tofu (pressed and crumbled)
  • 1 tablespoon olive oil
  • 2 cloves garlic (minced)
  • 1 teaspoon onion powder
  • Salt and pepper (to taste)

For assembly

  • 1 package vegan puff pastry (thawed)

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large pan over medium heat, add the olive oil. Once heated, add the minced garlic and stir for about 30 seconds until fragrant.
  • Add the shredded spinach and cook until wilted, about 2-3 minutes.
  • In a bowl, mix the cooked spinach and garlic with the crumbled tofu, onion powder, salt, and pepper to combine.

Assembly

  • On a lightly floured surface, roll out the vegan puff pastry. Cut it into squares.
  • Add a tablespoon of the spinach filling in the center of each square and fold the pastry over to seal. Press down the edges using a fork.

Baking

  • Place the rolls on a parchment-lined baking sheet and bake for 20-25 minutes or until golden brown.
  • Let them cool for a few minutes and serve warm.

Notes

Serve with a garden salad or tomato basil soup. You can also pair these rolls with dips like hummus or vegan ranch.
