  • 1 tablespoon olive oil
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 4 cups carrots, chopped Fresh carrots recommended for best flavor
  • 4 cups vegetable broth
  • to taste Salt
  • to taste Pepper
  • 1 tablespoon lemon juice

Preparation

  • In a large pot, heat olive oil over medium heat. Add diced onion and sauté for 5 minutes until it becomes translucent.
  • Stir in the minced garlic and grated ginger and cook for an additional minute.
  • Add the chopped carrots to the pot and stir well to coat them in the onion mixture.

Cooking

  • Pour in the vegetable broth, ensuring that all the carrots are submerged. Bring to a boil, then reduce heat and let it simmer for about 15-20 minutes or until the carrots are tender.
  • Once cooked, use an immersion blender to puree the soup until smooth.

Finishing Touches

  • Add salt, pepper, and lemon juice to taste.
  • If desired, top with a swirl of coconut cream and sprinkle with fresh cilantro before serving.

Notes

For a richer taste, substitute olive oil with coconut oil. Adjust spice level by adding cayenne pepper for extra heat. Store leftovers in an airtight container for up to 5 days, or freeze for up to 3 months.
