Ingredients
  

Dry Ingredients

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/3 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Wet Ingredients

  • 1/2 cup coconut oil or vegetable oil, melted Coconut oil preferred for richer flavor.
  • 1/2 cup almond milk (or any plant-based milk)
  • 1 teaspoon vanilla extract

Optional Ingredients

  • 1/2 cup vegan chocolate chips Optional for extra chocolaty flavor.

Preparation

  • Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking pan or line it with parchment paper.
  • In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, and salt. Whisk until well mixed.
  • In another bowl, mix together the melted coconut oil, almond milk, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Don't overmix! Gently fold in the vegan chocolate chips if using.

Baking

  • Pour the brownie batter into the prepared baking pan, spreading it evenly. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  • Let the brownies cool in the pan for at least 10 minutes before slicing into squares.

Notes

For a gluten-free version, use a 1:1 gluten-free flour blend. You can replace coconut oil with applesauce for lighter brownies. Store in an airtight container at room temperature for up to 3 days, in the refrigerator for about a week, or freeze for up to 3 months.
