  • 1 ripe avocado, sliced

Preparation

  • Start by heating a skillet over medium heat and adding a splash of oil.
  • Once hot, toss in the chopped onions and cook until translucent (about 2-3 minutes).
  • Then add the diced bell peppers and cook for another 3-5 minutes until tender.

Cooking the Filling

  • While the veggies are cooking, crack the eggs into a bowl. Whisk them together with salt and pepper until fluffy.
  • Pour the eggs into the skillet with the veggies and gently stir until just cooked through.
  • Stir in the cooked halal sausage and continue cooking for a minute until everything is warmed through.

Assembly

  • Lay a tortilla flat and generously spoon the filling onto the center.
  • Sprinkle some shredded cheese on top, and then add sliced avocado and a spoonful of salsa.
  • Carefully fold in the sides of the tortilla, then roll it away from you, tucking in the filling as you go.
  • Repeat for the remaining tortillas.

Final Touches

  • Optional—place the burritos back in the skillet, seam side down, to toast them for 1-2 minutes on each side for a crispy finish.
