Ingredients
  

For the Chicken

  • 1 pound Chicken breasts About 1 pound
  • Salt and pepper To taste
  • 2 tablespoons Olive oil

For the Sauce

  • 2 cloves Garlic Minced
  • 1 Lemon zest From 1 lemon
  • 2 tablespoons Lemon juice Freshly squeezed
  • 1/2 cup Heavy cream
  • 3 tablespoons Fresh dill Chopped

For Serving

  • Cooked grain or rice Optional
  • Veggies of choice Like steamed broccoli or sautéed spinach

Instructions
 

Preparation

  • Season the chicken breasts generously with salt and pepper.

Cooking the Chicken

  • In a large skillet over medium heat, add the olive oil.
  • Once hot, place the chicken breasts in the pan and cook for about 6-7 minutes on each side until cooked through and golden brown.
  • Remove the chicken from the skillet and set aside.

Making the Sauce

  • In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.
  • Stir in the lemon zest, lemon juice, and heavy cream, bringing the mixture to a gentle simmer.

Combining

  • Add the cooked chicken back to the skillet and sprinkle with fresh dill.
  • Let it simmer in the sauce for an additional minute or two.

Serving

  • In a bowl, place a scoop of cooked grain or rice if you’d like, then top with the lemon-dill chicken and a drizzle of the creamy sauce.
  • Add your choice of veggies to complete the bowl, and enjoy!

Notes

Feel free to swap chicken for turkey or tofu, and add your choice of veggies for customization. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
